This tart consists of a sweet pastry, filled with a soft pistachio biscuit and an intense pistachio ganache.

To perfect the whole, a second ganache, this time whipped to make it creamy and light, is piped and sprinkled with crushed pistachios before being hollowed out and filled with a pure pistachio praline.
