As part of the development of its own chocolate factory, our consortium of Pastry Chefs (Maison Philippe Conticini & Maison Jeffrey Cagnes) is looking for its Head Chocolatier.
Based in the United Kingdom, on the outskirts of Brighton, your mission will be to supervise the production teams of the Manufacture and develop chocolate product ranges alongside the Chefs of our consortium. You will also manage the logistics team to ensure the replenishment of all production laboratories (Maison Philippe Conticini London, Maison Philippe Conticini Paris, Maison Jeffrey Cagnes Paris).

Your missions:
↳Develop all recipes for chocolate products under the control and responsibility of the Executive Chefs of both Maisons
↳Develop all recipes for chocolate products needed for the pastry production laboratories, under the control and responsibility of the Executive Chefs of both Maisons
↳Ensure the link and communicate information inherent to the products created for all departments of the company
↳Establish the production schedule and logistical timing in conjunction with the Executive Chefs
↳Organize team work to respect the production schedule
↳Guarantor of the organoleptic and visual quality of the entire range of chocolate products
↳Guarantor of compliance with validated recipe sheets
↳Supervise, support, and train the production team
↳Guarantor of relations with raw material suppliers and guarantor of cost control
↳Guarantor of relations with external service providers
↳Stock management and replenishment
↳Guarantor of hygiene and food safety standards
↳Manage team schedules
↳Manage payroll
Profile:
↳CAP Chocolatier / MC Chocolatier (French professional degrees in chocolate making)
↳ 5 years of experience in a similar position
↳ Interpersonal and management skills
↳ Sense of cost control and financial management of a production department
↳ Autonomy, proactive in suggesting improvements to structures and processes
↳Mastery of production tools for a Chocolate Manufacture
↳ Strong sense of teamwork, you agree to collaborate with the various stakeholders of the company
Technical Skills:
